Today is my first shared recipe! Lately I have discovered a stronger like for cooking. It has not reached the love status yet but could someday soon. Tonight I made.....
2 Tb olive oil
6 chicken thighs
1 tsp salt
1/2 tsp pepper
1 onion sliced or chopped (whichever you prefer)
1 cup of chicken stock
1/2 cup of white wine
1 large can crushed tomatoes in thick puree
1 small can tomato puree
1 tsp dried thyme
1/2 tb dried rosemary
1 tb lemon pepper
2 tb chopped parsley
Heat oil in skillet over medium high heat. Season chicken with salt and pepper. Brown the chicken for about 4 min on each side. Transfer to plate to reserve.
Add onion to the pan and saute until tender. Add stock and wine and stir, deglazing the pan. Now a little side note about the wine. I used to not cook with wine because I don't like white wine and therefore never had it on hand. And I wasn't going to go buy a whole bottle of it when I only needed 1/2 cup. But then I discovered this.....
This has been sooooo great because I can buy it for a couple of dollars and keep it in the fridge for when I need a cup here or there. I usually keep a couple in the pantry. Ok lets continue...
Turn to high and reduce by half, about 3 min. Pour in both cans of tomatoes and add dried herbs and lemon pepper. Add the chicken back in, cover and cook on medium low for about 40 min. When its done we serve it on a scoop of rice. Sometimes I butter the rice but today I wasn't in the butter mood. But whatever makes YOUR skirt fly!

Leftovers. Boring old chicken alfredo. This looks yummy though, I'll have to try it.
First off, yay, Kaden is eating something!
Second, where did you find the wine? I'm starting to like to cook more now too (I know, shocking!). I've been going through a Rachel Ray cookbook and loving it, but she calls for red or white wine in a lot of her recipes.
Third, I made really yummy chicken sausages with sweet bell peppers and cornmeal pancakes on the side. It was good!

That looks good - I am always wondering what other people are cooking or eating. I get so bored with food and many times nothing sounds good. I need to get back into the habit of cooking on a regular basis. I hope you keep your recipe ideas up here!!!! Looks much better than my Subway sandwich I had for dinner.
